Olive oil

In our terraced olive groves, we grow olives of the Moraiolo and Frantonio varieties. They are harvested in November when they are fully mature and are immediately pressed in the La Pieve stone mill, close to the estate.

The pressing is performed without any heat or any of the other interventions sometimes employed to improve the efficiency of extraction. After a short settling period, the olive oil is bottled in 500ml bottles, without filtration to preserve its aromatic potential and its organoleptic qualities.
